The food photograph and the recipe reveals the reason …

The Recipe of ‘Chicken and Lentil – Red Soup’:

Quantity of yellow moong dal: approx. 125 gm

(yellow moong dal are mung beans that has been skinned and split, yellow moong dal cooks quickly)

Quantity of chicken meat pieces: approx. 200 gm

Cook the chicken meat pieces along with moong dal in adequate quantity of water (quantity of water should be according to the consistency of lentil soup you prefer), in low heat; blend the warm mixture with finely sliced pieces of a medium onion and 2 red capsicums; add the mixture with 1/2 tsp. of asafoetida powder, 1/2 tsp. of turmeric powder and finely sliced pieces of 2 green chillies for mild pungent flavour (these chillies are small and extremely slender, having fresh pungent flavour), cook the mixture until the dal and chicken meat pieces are cooked.

In another utensil, prepare the tadka (tempering) – add 1/4 tsp. of mustard seeds in adequate quantity of warm, any mild-flavour vegetable oil; when the mustard seeds begin to crackle, add finely sliced pieces of 2 medium tomatoes to the blend, smidgen the mix with salt – according to preference of flavour, cook the mixture until the tomato pieces melts.

Blend the tadka to the warm lentil soup and simmer the combination for approx. 5 minutes.

The soup has the blend of mild-sweet and mild-spicy flavour.

… the inclusion of red capsicum along with tomatoes lends this ‘Chicken and Lentil – Red Soup’, red colour along with spicy-sweet flavour; and an important point to note is that, red capsicums are a very rich source of vitamin C.
