Thick Gravy of Paneer Cooked in an Iron Tava:

Quantity of paneer (cottage cheese): approx. 100 gm

In a concave iron tava, saute finely sliced pieces of 3 medium tomatoes in warm, adequate quantity of any mild-flavour vegetable oil; smidgen the mix with salt – according to preference of flavour; when the tomato pieces get partially melted, add 2 handfuls of finely sliced pieces of scallions; when this mixture condenses, add 1/2 tsp. of aagri masala ( this spice mix  is fantastically flavourful and has a moderate level of pungency, or you can opt to add any other garam masala – according to preference of taste) and 1/4 tsp. of turmeric powder; blend the vegetable mix with small paneer cubes; when the paneer cubes turn slightly crisp on the surface, switch off the heat, add thick curd (approx. 80 gm) – whisk the curd before blending it with the paneer mixture.

A delicious paneer gravy of slight-sour and pleasant-spicy flavour.

Warm Salad of Sweet Corn Kernels Cooked in an Iron Tava:

Quantity of sweet corn kernels: A generous handful of sweet corn kernels

Oil the iron tava with minimum quantity of any mild-flavour vegetable oil with the help of a spoon, add finely sliced pieces of 2 medium tomatoes in the warm pan/tava, smidgen the blend with salt – according to preference of flavour; blend the melted tomato pieces with finely sliced pieces of 3 small green capsicums, add the blend with 1/4 tsp. of turmeric powder; when the capsicum pieces are par-cooked, mix the mixture with sweet corn kernels, cook the sweet corn kernels salad until the sweet corn kernels turn juicy in texture.

A sweet corn salad with peppery-sweet-sour flavour because of green capsicum and tomato, mixed with sweet flavour of sweet corn blended with saltiness – an amazing treat for the taste buds.

Serving size: approx. 4

Yam Slices Pan-Fried in an Iron Tava:

Quantity of yam: 1/2 kg

Slice the yam into reasonable thin pieces for frying

Marinate the yam slices with either 1/2 tsp. of sambhar masala (this spice powder mix is a blend of these ingredients: coriander, chilli, fenugreek, cumin, curry leaves, edible common salt, Bengal gram, green gram, black gram, black pepper, cassia bark, turmeric, asafoetida and refined cottonseed oil) or aagri masaala (the ingredients of this  powdered spice mix are chilli, turmeric, black pepper, cloves, mustard seeds, poppy seeds, mace, black cardamon, green cardamon, bay leaf, star anise, stone flowers & salt), 1/2 tsp. of turmeric powder and smidgen of salt – according to preference of flavour – for approx. 10-15 minutes.

Oil the iron tava with minimum quantity of any mild-flavour vegetable oil with the help of a spoon, pan-fry the yam slices in medium heat; place adequate number of marinated yam slices on the tava, immediately turn the yam slices until its well coated with oil on both of its surface, then fry the yam slices consecutively on each of its sides until its surface turns crispy.

The yam slices retains its nice particular flavor along with the pleasant flavour of the spice powder.
