Quantity of vegetables: approx. 250 gm of potato and 2 medium green capsicums
- Saute finely sliced pieces of a big tomato in adequate quantity of warm, any mild-flavour vegetable oil, until the tomato pieces begin to melt; blend the mix with potato pieces, green capsicum slices and mashed pieces of 4 garlic cloves (optional); blend the vegetable mix with ¼ tsp. of turmeric powder and ½ tsp. of aagri masala for mild-pungent flavour (a rustic blend of spices from the Agri folks of Maharashtra, this masala/spice mix has a distinct lovely flavour with moderate level of pungency), smidgen the mix with salt – according to preference of flavour, add the blend with ½ a glass of water; cook the veg mix until the potato pieces turn tender and the liquid evaporates for a extremely thick sauce.
If you are having this veg mix dish with buttermilk drink during your meal, it is needless to add garlic cloves to this dish.
