The two main ingredients in this curry are – Sambhar Masala, a flavorful and popular spice mix & Buttermilk; these two amazing ingredients enriches the okra curry with flavor and texture.
The recipe of tasty okra curry:
- Sauté finely sliced pieces of 2 small onions in adequate quantity of any, mild-flavour vegetable oil, add finely sliced pieces of 3 small tomatoes to the translucent onion mixture, smidgen the mixture with salt – according to preference of flavour,
- Blend the melted mixture with 2 tsp. full of sambhar masala, ¼ tsp. of turmeric powder and ¼ tsp. of tikhalal chilli powder for mild-pungent flavour – this chilli powder has high level of pungency and gives food bright red colour (or any other chilli powder – according to preference of flavour),
- Add thick-medium sliced pieces of ¼ kg of okras to the mixture, add ½ a glass of water for the okra pieces to cook,
- When the okra pieces turn tender, add half a liter of buttermilk to the mixture and simmer the combination for about 5 minutes.
