Carrots are especially rich in anti-oxidants, vitamins and dietary fibre, Yogurt comes from milk – providing animal protein and several other nutrients (calcium, vitamin B-2 & B-12, potassium and magnesium) and Rice is one of the few cereals that is free from gluten … I have refreshingly combined these three foodstuffs for a healthy meal.
- Chuck mustard seeds in vegetable oil, once the mustard seeds begin to crackle sauté thick sliced pieces of carrot and add curry leaves.
- Meld the mixture with pieces of cinnamon stick, finely grated shreds of coconut and add salt.
- After the carrot pieces turn tender relish it with – Rice steamed with slices of onion sautéed in butter & Yogurt spiced with pinch of chilli & turmeric powder
